Today I had a meeting with someone who was sharing some thoughts on weight loss with me, we chatted about my time working at Weight Watchers and my love for zero point foods. All foods have a food point value and you are allocated a set number of points for your weight, some foods like Butternut Squash have zero points and you can eat as much as you want.
Butternut Squash is a great food, it can be eaten cooked and uncooked and is now available all year round. It can replace Potatoes and Sweet Potatoes as a staple food at any dinner, you can also make soups, curries and even roast them. I have never found anything that you couldn't do with them when replacing Potatoes.
Now I know some of you don't know how to use them so I thought I would just tell you how I use them.
I tend not to cook them in water as Squashes are high in water already and they can go to mush if boiled so I tend to use some spray some oil over them and bake them in the oven with some garlic and thyme. You can eat them with the skins on but I like to have as much of the flesh showing as I can as when it is cooked it goes all stick and caramelized, but at the end of the day its up to you.
I tend to roast the Squash no matter what I am going to do with it, be it to make soup or add to a curry as it adds so much flavor its worth the 25-30 mins in the oven.
