So I just had to post this photo of Eric Himan, Who as you know (if you read this blog) is a singer, his music is a kinda country/acoustic mix of powerful semi political songs. (Thats a really bad description of some great music, sorry Eric). You can download his albums from iTunes. Oh and he's really sexy to boot...

So today is day 14 of taking my magic little pills, I have my first weigh-in at the doctors tomorrow to find out how they are working. I can tell you I'm eating much less than I did two weeks ago but will this show at the scales? Baz and I were talking last night about how hard it is to find things to eat at lunch. I will explain to you our different problems...

Baz; Works in an office with a few other people and his lunch break is a way of getting away from his desk and away from the phone. He use to go to the staff canteen and have some vegetable rice or a jacket potato with beans, but the canteen has now got a chef in and all the food has gone very fancy and omni with no Vegan alternative. His other alternative is to sit in a really busy park with a sandwich...

Me; I have an hour lunch break where I shear a staff room with up to 8 other people who are also on there lunch. The staff room is right next to the shop floor and people think nothing of coming to find you with a question of want you to deal with a customer or rep. I don't mind this from time to time but it can mean that I end up not eating all of my lunch. My alternative is to go to the park down the road which is so nice in this warm weather. Apart from when someone sits next to you and starts smoking, but thats another blog entry... 

Now I think the problem we both have is park food tends to be sandwiches as you can buy them or even make them at home. If we make them at home they have to sit in our bags till lunch. For me this can be some six hours. We have both tried to take salads but they really don't cope with the heat, and if you buy the salad from the shops it starts to cost a bomb.

We both say we eat way to much bread and want a low fat healthy alternative that will cope with the heat. I can't face eating more simple carbs like pasta or rice so I'm at my wits end with this one...

How do you keep costs down, food fresh, easy and quick to make, cold and finally interesting? 

If I can find FIVE lunches that we can change every day that Baz (the picky one) will eat. I would like to be able to make it the night before or it would have to take no more than 5-10 minuets to make it in the morning.

What do you do?

I won't be much help, I will say salad (though diffrent kinds of salad).

Oh! You could make 'happy tuna' (which is made with chick peas) or tofu salad (eggless egg salad) then bring sprouts and lettuce leaves and make lettuce wraps. Hmmmm!

Another option that might work for you is homemade soup, which you can bring in in a flask to keep it warm.

Personally I'm lucky enough that my work has a fridge and microwave. I usually bring in last night's leftovers(curry, chilli or something) to heat up or bean salad which I keep refridgerated. Would your bosses maybe let you buy yourself a mini-fridge? Failing that, a cool-bag type lunchbox might work to keep your salads cool.
